A pilot trial (phase two) was carried out with 107 users in three dining rooms, having an expected prevalence of 50%, an error of 15% and a reliability of 95%; the sample size was made with EPIINFO statcalc. Results 57% of those surveyed are female. 82% of the surveyed population said that they like the food they received, 80% answered affirmatively to the question of total food consumption. The committee of experts selected tracer variables for being of importance in the performance of the dining rooms, for their subsequent monitoring; For the above, a statistical analysis was performed to compare proportions using the homogeneity test. Discussion Of the three dining rooms, it was found that for the tracer variables there was a statistically significant difference in the comparisons of Gender and educational activities (p: 0.011), Dining room and designated space (p: 0.000), Dining room and performance of educational activities (p: 0.004); and in dining room and attendance at educational activities (p: 0.000)
