This study presents some methodologies that have been taken as strategies, which are based on Lean philosophy; these strategies seek the reduction of wastes accompanied by continuous improvements. The methodology was taken as a management model for the company Banqueting House Alvaro O Castaneda, specifically with the production process. Throughout an initial analysis of the Value Stream Mapping, Lean Opportunity Assessment and Value Stream Plan established with Phases, Objectives, Targets, Schedule, Responsible, concerned for the with the ultimate aim of increasing the value-added customer service.
