abstract

  • This work sought the possibility of creating a university career, based on culinary and management, in the inter-institutional agreement of the Higher School of Business Management (ESAN) and the Le Cordón Bleu Gastronomic Institute, located in the city of Lima, Peru. The idea was to take advantage of a white spot in the market, which has not been developed, so there is no need for a demand or request from customers, but it may have the ability to be recognized for its quality standards. In the development of the work, visits were made and interrogated in places like gastronomy such as Punta Sal, chef Adolfo Perret's restaurant and grocery markets, such as Surquillos and Surco. Subsequently, an investigation was made on the related topics and this study was carried out in order to place it in consideration for those interested in the agreement that can decide on its materialization in the future.
