  • Following the relevance that the highest quality coffees are taking on in the market, this work reconstructs journalistically the productive, commercial and consumer environment of the world of specialty coffee told through the voices of Colombians who are making it grow. This report is divided into five sections that show the transformations of thought, technical and technological changes, and sensory characteristics that make this a topic of interest. It was built around four key concepts concerning coffee: roasting, tasting, identity and learning. The sections are the following: From burning to roasting is told by master roasters and an innovator who could change the course of how expensive roasting can be; An international palate presents a certified taster well-known abroad; Re knowing the Colombian coffee tells the point of view of an experience leader, pioneer in the world of specialty coffee; Captivating Arab lands through the coffee market shows how a Colombian woman came to commercialize and impose trend with Colombian coffee, and finally, the vision of two educators is showed in Two coffee schools driving specialty.
