  • This project was made with the idea of showing the importance of the reverse logistics and eco efficiency among different industries and how these processes can be adapted into the gastronomic industry by starting with the Restaurant Punta Sal located in Lima, Peru. Different enterprises and cases were these processes were applied were studied for giving recommendations to the restaurant as how to apply them into their strategy.
