Chia is a town located in Cundinamarca that has been transforming its rural character as a result of the urbanization process, therefore, the agricultural activity of the territory has almost completely disappeared. However, activities such as the production and sale of milk are still current and face other phenomena such as the ban on the sale of raw milk for direct human consumption. These phenomena directly affect the small milk producers of the town that are part of a network that allows the operation of the production and sale of the food. In this way, this research work analyzes the configuration of the assemblage of the production and sale of milk in the vereda Fonquetá from Chía, made up of heterogeneous regulations, practices and actors. It is argued that the assemblage is part of a hybrid reality that links elements associated with the traditional and the modern and enables the coexistence of different economies.
